Salsa

So several weeks ago a co-workers wife and sister-in-law made some awesome salsa. I loved it so much, I asked for the recipe. What I got was a list of ingredients, and statements like “to taste” and “a good ratio”.

Those who know me know I can NOT cook like that. I actively dislike cooking, and I’m not good at it because I didn’t try to learn because I don’t like it! So this is a recipe for disaster.

But it was Sooooooo good. Not at all spicy, a little sweet, I couldn’t “taste” the peppers at all! And Meijer had bell peppers on sale over the weekend. So I tried my best.

It took me an hour (including cleanup of mistakes, 45 min actual work on food) – which is WAY too long in my book. Not worth the time for the result. A big part of it was not having the proper cooking utensils. My blender has a “chop” button, but “chop” it did not. If I ever make salsa again, I will have to buy a veggie chopper first.

Still, the result was pretty good! Not as good as the original I was trying to duplicate, but that’s okay. I think I added too much vinegar. And then I know I added more garlic salt than I wanted, in order to cover the too vinegary taste. I may have needed more onion or more tomatoes, I’m not sure on those though. What I came out with was similar to what I wanted! Close enough for me to eat it and chips for lunch today!

Here’s my recipe:
2 medium tomatoes
1 large Yellow Bell Pepper
1 large Orange Bell Pepper
1 large Green Bell Pepper
1/2 medium white Onion
1 1/2 tsp Vinegar (which is 1/2 of what I actually used)
Start with 1/2 tsp Garlic Salt, add more if needed

- Dice each pepper, the onion, and the tomatoes
- Mix all ingredients together
- Put in refrigerator for at least 1/2 hour
- Stir again
- Store in refrigerator until serving
